The Herb Garden

At Rocksalt we are privileged to have access to two farms belonging to the owners of the company, and it is here that we can pursue our dreams of self-sufficiency.

At Mill House we have planted an acre of land with herbs, salads and some spring/summer vegetables. These are delivered daily to our kitchens at Rocksalt where our chefs use them in all manner of recipes. Sometimes Hythe Garden Services, who look after the plots for us, will arrive with a glut of coriander which we turn into pesto for garnishing our soups, while on other days they bring bunches of punchy radishes which we serve with our house anchovy dip. Eventually, we want to be able to grow most of our own seasonal vegetables like tomatoes, courgettes, beans, pumpkins and squashes, just leaving the main crops like carrots, onions and potatoes to be sourced elsewhere. For the meantime, however, we are happy with our blooming crops of salads and herbs.

At Horton Park Farm we have free range chickens that lay our eggs, and we are currently speaking to the farmer to see how best to starting rearing our own cattle, sheep and pigs.
