A restaurant is only as good as the suppliers it uses. Without the very best quality produce, be it food or drink, a restaurant will never be able to shine.
The Folkestone Trawler Company has been a massive support to us and is at the heart of our business. Their day boats supply us with the freshest fish known to man! As the fish is caught every day and is sometimes still alive when landed, we can ensure that the quality is second to none. All of the boats fish with sustainable nets, so we know that the quality of the produce is fantastic and can be eaten with a clear conscience. At Rocksalt we also let the seasons dictate our menus, listening to Terry the trawler man about which fish is in abundance and also what we can look forward to using for our specials.
Knowing where your produce comes from is extremely important and something that we are passionate about. Our Kent and Sussex beef is all reared from local herds and hung for 32 days. Our pork belly and Kentish Ranger chickens are from Monkshill Farm in Faversham, which also supports a school for the deaf. Our delicious lamb is farmed on the surrounding salt marshes giving it an amazing texture and flavour, and when it's in season we use Romney Marsh lamb which is possibly the finest quality you can get.
